Caption: Agronomy graduate student Camilla Vargas demonstrates how to innoculate corn with cultures of huitlacoche, a fungus which is considered a delicacy in Mexico. During a summer festival at Troy Gardens in Madison, members of the public were introduced to huitlacoche. The Troy Community Farm grew the huitlacoche as part of partnership research project with UW-Madison, with technical support from the Center for Integrated Agricultural Systems and UW faculty and graduate students.
